The index in your Coveo organization is searchable through its fields. Fields exist index-wide, and are the targets of searches. In order to make maximum use of the fields, metadata and text from the items in your index are mapped to the relevant fields. Understanding what fields contain what data, and when to map data from different sources to the same field, is important for getting the most from your organization.
